Gluten-Free Blueberries Cupcakes

Ingredients:

  • ¾ Cup Gluten-free Flour
  • 1 Cup Coconut Sugar
  • 2 Tablespoons Flex seeds
  • 2 Table Spoons Chia seeds
  • 1 Chuck Ginger, Grated
  • 3 Eggs (5 egg whites)
  • 1 Cup Blueberries
  • ½ Cup Pureed Mango
  • ¼ Cup Coconut Oil
  • 4 Tablespoons Lemon Juice

Direction:

  • Preheat oven to 180 degrees C.
  • Combine and mix all ingredients starting from eggs. Stir until thoroughly combined
  • Bake 20-30 Minutes (depending on oven)
